Recipes/Chocolate Chip Cookies

90g | granulated sugar |
7.5g | kosher salt |
2.5g | baking soda |
10g | vanilla extract |
50g (1 whole) | egg |
200g | pastry flour |
150g | chopped chocolate or chocolate chips |
- Cream butter, sugars, salt, and baking soda
- In a stand mixer with paddle attachment, combine ingredients
- Increase speed to medium-high and mix for two more minutes, pause to scrape down sides. Dough should be pale tan and fluffy
- Add vanilla and eggs with mixer going
- Increase speed to high and mix until fully incorporated
- Add flour, mix until incorporated
- Add chocolate, mix until incorporated
- Portion into balls (~65g each) and chill
- Preheat oven to 350 F / 177 C
- Bake for 13-14 minutes
- Let rest for at least 10 minutees
